Stir to combine the ingredients. Add 1 tsp of vanilla extract and stir again. Then 1 cup of unsweetened shredded coconut flakes are to be added. The ingredients include 2 pounds of chicken thigh fillets, 1 tsp of of garlic powder, 2 tsp of celery salt, ½ tsp of hot chilli powder, 1 tsp of dried oregano, 1 egg, 2tbsp of heavy cream, ½ a cup of almond meal and ½ cup pf finely grated parmesan. Each thigh fillet is to be cut into 3 evenly sized piece and placed in a bowl. The chicken is to be coated with the garlic powder, celery salt, hot chilli powder and dried oregano. These are to be mixed well to ensure all the chicken is covered. Now they are left to marinate for half an hour. Now the eggs and cream are whisked together, then poured on to a tray ready to bread the chicken. No turn the deep fryer with the peanut oil to 180 degree Celsius and allow it to heat up. Each piece of chicken is then dipped in the egg mix and rolled in almond meal and parmesan mix. They are set aside on the tray until ready to fry. The chicken is placed in the fryer basket. The basket is not to be over-crowded. If the fryer is small, one can easily place 8 pieces of chicken in the basket. This prevents oil temperature from dropping too quickly and allows the chicken pieces to be surrounded by the oil and not stick to each other. The chicken is fried for 5-7 minutes until dark golden brown. To confirm if the chicken is cooked, remove one of the pieces and cut through the thickest area to check. If it seems that its cooked through, its ready to be served. It just contains 1 g of carbohydrates.
Keto peanut chicken: The ingredients include 6 medium (approximately 25 ounces) boneless skinless chicken thighs, 6 tbsp of unsweetened peanut butter, ¼ chicken stock, 2tbsp of soy sauce, 1tbsp of orange juice, 1tbsp of lemon juice, half a tsp of sesame oil, 2 tsp of chilli paste, a quarter tsp of coriander, a quarter tsp of cayenne pepper.
